Farmer’s Market Recipe: Nettles Pesto

My typical Sunday routine always starts with a trip to the Farmer's Market. The produce is excellent and constantly changing with the seasons. This week, the new kids on the block were stinging nettles and bok choy blossoms. The bok choy blossoms are simple --- saute them in a pan with coconut oil and salt/pepper. Last week, I made bok choy blossom tacos and they were very tasty. Nettles will be around another few weeks, but has a short season.
